Darien List, the connoisseur of great barbecue and owner of Beach Hill Smokehouse, is no stranger to bringing authentic flavors from Central Texas to Toronto with his imported dry-rub ribs and brisket.
However, this month, List is introducing a unique item to the menu – a vegan mushroom brisket. This innovative dish incorporates vegan plant-based mayonnaise to absorb the traditional barbecue rub, infusing a smoky flavor into the mushrooms.
While unconventional for List, this addition has expanded the smokehouse's customer base. He notes that it caters to couples with mixed dietary preferences, stating, "You may have a couple, one may be a vegetarian or a vegan, and the other is basically like me, just a straight-up carnivore. And they can't find a restaurant that can come to the middle of the road."
The response to the vegan option during "Veganuary," a New Year's challenge originating from a British charity promoting a plant-based diet for January, has been positive. Many restaurants in Toronto are embracing the trend, either featuring longstanding vegan dishes or introducing new ones, as they recognize the growing demand for diverse dining options, especially among younger customers.
List, reflecting on the introduction of the vegan mushroom brisket, remarks, "We experimented with it, and it's been going pretty good so far."
Veganuary, a registered charity in England, drew 700,000 participants globally in 2023. In Canada, a 2018 study from Dalhousie University found that 6.4 million people have dietary preferences reducing or eliminating meat consumption. Additionally, 32.2% of Canadians were contemplating decreasing their meat intake, citing reasons such as health benefits, taste preferences, environmental concerns, and cost.
Sarah Fay, the engagement and events manager at VegTO, a vegan advocacy organization, notes that January promotions offer a casual way for individuals to explore a plant-based diet. She observes a growing interest in reducing meat consumption for environmental, ethical, and health reasons.
While some restaurants adopt vegan promotions seasonally, others, like Chotto Matte in Toronto's financial district, consistently feature vegetarian and vegan dishes. Luis Avila, preparing for the lunch crowd, emphasizes the high demand for these options, stating, "We always keep evolving our flavor profiles."
As Veganuary gains momentum, it's clear that plant-based dining options are becoming a year-round consideration for restaurants aiming to meet the diverse preferences of their customers.
